Cozy Up with Paso Wine This Winter

By Paso Robles Wine Country Alliance

As the grape vines take time to rest this winter, Paso Robles Wine Country encourages you to do the same. We don’t know about you, but the slower pace of the season is much needed after all the holiday festivities.

From fewer crowds to stunning views, winter is one of the best times of year to explore local wineries or simply grab a good book and settle in with a glass of Paso wine.

Winter in the Vineyard

There is a calm in the air this time of year. Time moves slow compared to the business of harvest. The vines have dropped their leaves and begin their off-season dormancy ready for the winter rains to replenish much needed moisture. The same winter rains have turned the rolling hills of Paso into beautiful shades of green, which will only last a short time before the weather warms again.

Yet while the vines may look sleepy, the vineyard crews are already hard at work planting cover crops, tackling weeds, and soon pruning the vines for the next vintage. Lots of work gets done above ground, but what we don’t see is below ground where the soil is also going through a transformation, regenerating nutrients from compost and building a stronger foundation for the next growing season.

Paso Wines for Wintertime

As temperatures drop, Paso wines are the perfect way to add warmth and celebrate a time of connection with friends and family during those chilly winter evenings.

Zinfandel is an obvious star this time of year. Paso’s heritage grape brings dark berry flavors, hints of spice, and that trademark velvety finish — perfect for pairing with hearty winter dishes or sipping fireside.

Cabernet Sauvignon and Bordeaux-style blends deliver structure and elegance, with notes of blackberry, cocoa, and toasted oak that feel tailor-made for slow evenings and unhurried conversations.

Syrah and Rhône varietals offer a spectrum of winter-friendly profiles from peppery and savory to lush and fruit-forward. These wines bring complexity that pairs beautifully with winter comfort foods, from braised meats to roasted vegetables and rich stews.

Petite Sirah is a sleeping giant that is quickly becoming synonymous with the rich red wines of Paso Robles. Robust fruit flavors like black cherry and plum reminisce of the holidays, and a smooth, long finish brings added warmth while sipping by the fireplace.

Viognier and Roussanne provide weight and texture without sacrificing brightness, while Chardonnay offers a depth that’s fantastic if don’t want to give up your chilled wine on a chilly day. If you prefer something brighter, a crisp Albariño or Grenache Blanc can be a refreshing reminder that spring isn’t too far away.

Home-cooked comfort food in, fun dinners out with friends, cozy nights by the fire, and everything in between, there is a Paso wine fit for any winter occasion.

Winter at the Wineries

If you’re looking to get out of the house, there are plenty of Paso Robles tasting rooms perfect for escaping the winter cold. Many wineries have spectacular fireplaces, intimate barrel rooms, and outdoor heaters that make the tasting experience even more memorable. Search Pasowine.com by amenities to find cozy spots to go wine tasting this winter.

Whether you’re exploring at the wineries or enjoying in the comfort of your home, cheers to getting cozy with a glass of Paso wine this winter.
